SHAPING CULINARY SLOW FOOD TOURISM IN SARAJEVO CANTON

The Sarajevo Economic Region Development Agency (SERDA), as one of the partners in the SReST project, is dedicated to transforming Sarajevo Canton into a sustainable and socially responsible destination for culinary slow food tourism. The focus of the SReST project is the identification of local products, services and culinary traditions that reflect the rich cultural and gastronomic heritage of our region and creating platform for development of slow food tourism in a socially responsible way.

The SReST project is supported under the EU Interreg Danube Programme and is implemented by partner organizations from 7 countries of the Danube region, including Bosnia and Herzegovina.

During the two-month research process (September - October 2024), our team visited villages of Bjelašnica and the Nišići Plateau, where they met with local producers, farmers, associations and local communities. These encounters provided an opportunity to gather and document valuable information on traditional recipes, products and food production methods, while also exchanging knowledge on sustainable and socially responsible production. Particular emphasis was placed on preserving and integrating traditional methods into modern tourism offerings.

Laying the foundations for Socially Responsible Culinary Slow Food Tourism

The results of this research will serve as the basis for developing tourism solutions that highlight the authentic flavours and stories of Sarajevo Canton. Through collaboration and joint efforts, the SReST project positions culinary heritage as a key driver of sustainable and socially responsible tourism development in the region.

The solutions to be tested in the next phase of the project will be practical, inclusive and aligned with the principles of slow food tourism, promoting sustainability and responsibility towards the local community and the natural environment.
